Embracing Imperfection
"When I was a little girl, my mom liked to make breakfast food for dinner every now and then. And I remember one night in particular when she had made breakfast after a long, hard day at work. On that evening so long ago, my mom placed a plate of eggs, sausage, and extremely burned toast in front of my dad. I remember waiting to see if anyone noticed! Yet all my dad did was reach for his toast, smile at my mom, and ask me how my day was at school. I don't remember what I told him that night, but I do remember watching him smear butter and jelly on that toast and eat every bite!
When I got up from the table that evening, I remember hearing my mom apologize to my dad for burning the toast. And I'll never forget what he said: 'Baby, I love burned toast.'
Later that night, I went to kiss Daddy good night and I asked him if He really liked his toast burned. He wrapped me in his arms and said, 'Debbie, your Momma put in a hard day at work today and she's real tired. And besides a little burnt toast never hurt anyone!'
You know, life is full of imperfect things.....and imperfect people. I'm not the best housekeeper or cook. What I've learned over the years is that learning to accept each other's faults - and choosing to celebrate each other's differences - is one of the most important keys to creating a healthy, growing, and lasting relationship.
And that's my prayer for you today. That you will learn to take the good, the bad, and the ugly parts of your life and lay them at the feet of Jesus. Because in the end, He's the only One who will be able to give you a relationship where burnt toast isn't a deal-breaker! We could extend this to any relationship, in fact, understanding is the base of any relationship, be it a husband-wife or parent-child or friendship!! "

I was packing for my business trip and my three year old daughter was having a wonderful time
playing on the bed. At one point she said,'Daddy, look at this' , and stuck out two of her fingers.
Trying to keep her entertained, I reached out and stuck her tiny fingers in my mouth and said,
'Daddy's gonna eat your fingers,'
pretending to eat them.
I went back to packing, looked up again and my daughter was standing on the bed staring at her
fingers with a devastated look on her face.
I said, 'What's wrong, honey?'
She replied,
'What happened to my booger?'

Beef Satay Fried Rice
Give this one a try!
Ingredients:
• 2 tsp (10 mL) vegetable oil, divided
• 1 lb (450 g) boneless beef top sirloin steak, cut 1/2 in. (1 cm) thick
• 2 medium carrots, peeled
• 1 medium red bell pepper
• 4 green onions with tops
• 1/2 tsp (2 mL) Thai red curry paste
• 3 pouches (8.8 oz/250 g each) cooked white rice or 6 cups (1.5 L) cold cooked white rice
• 3/4 cup (175 mL) peanut sauce
• 1/2 cup (125 mL) dry roasted peanuts
• 1 tsp (5 mL) salt
• 1/2 tsp (2 mL) coarsely ground black pepper
Directions:
1. Prepare and cook steak.
Add 1 tsp (5 mL) of the oil to (12-in./30-cm) Skillet; heat over medium-high heat 1-3 minutes or until shimmering. Cut steak crosswise into 1/4-inch-thick (6-mm) strips. Add steak to Skillet, cook and stir 3-4 minutes or until outside surfaces of steak are no longer pink. Remove from Skillet; set aside and keep warm.
2. Prepare vegetables and cook rice and vegetables.
Meanwhile, cut carrots into julienne strips using Julienne Peeler. Thinly slice bell pepper and green onions with Santoku Knife. To same Skillet, add remaining 1 tsp (5 mL) oil and curry paste; cook 1-2 minutes or until fragrant. Separate rice according to package directions. Add rice and vegetables to Skillet; cook and stir 3-4 minutes or until rice is coated with oil and vegetables are tender.
3. Finish and serve.
Add steak, sauce, peanuts, salt and black pepper to Skillet. Cook 1-2 minutes or until heated through, stirring constantly. Yield: 6 servings

For those of you who are thinking, "Right! Like anyone would offer to wait on me!" I can only say that if you ask for what you want and believe that you will receive it, you usually do.
The other day my sister had a friend that wanted her to go with her to get a pedicure and offered to PAY and she DECLINED!! Sometimes we feel bad about letting others do things for us, but LET THEM and then you too will have the chance to show the favor to someone else! Being a mother is stressful and we ALL need to take a time out once in a while.

Easter Smores
Just thought that I would share this super cute idea!
INGREDIENTS AND DIRECTIONS:
1. Reduce 1 sleeve graham crackers to crumbs.
2. Layer 2/3 of the crumbs in a 1 quart jar.
3. Place 8 marshmallow bunny peeps standing up, facing out around the inside of the jar.
4. Press them up against the glass, but don't squash them.
5. Carefully spoon remaining crumbs in the center of the jar to support the bunnies, pressing down to keep it snug.
6. On top of this pour 1-1/4 cup Easter M&M's.
7. Spoon 1/3 cup brown sugar into center of M&M's, gently pressing with a spoon.
1. Empty the jar contents into a bowl. Snip the bunnies into bits with kitchen sheers or cut up with a knife. Return the bunny bits to the mixture. Mix well.
2. Melt 1/2 cup butter; add 1 teaspoon vanilla. Pour this over the dry ingredients, mixing well. Pat into a greased 9" square pan.
3.Bake at 350 degrees F for 15 minutes. Cool and cut into bars.(Makes 9 to 12 bars.)
*Option - leave bunnies whole; combine remaining ingredients and place the bunnies on top; then bake as directed.
*This gift jar may be created to suit any holiday for which marshmallow candies are available.

Chicken Cordon Bleu
Chicken Cordon Bleu
6 Boneless chicken breasts
6 thin slices ham
6 this slices swiss cheese
1/4 teaspoon thyme
1/4 cup melted butter
1/2 cornflake crumbs (I used bread crumbs)
salt and pepper
Place chicken pieces between sheets of plastic wap and pound with meat mallet or rolling pin to about 1/8 inch thick.
Place one slice of cheese on each slice of ham roll ham and cheese and place in center of chicken breast. Tuck in ends and wrap chicken around ham. (Just roll it up!) Fasten edges with toothpicks. Add spices to cornslake crumbs. (I didn't do this because I didn't have thyme and it still tasted good) Dip chicken in melted butter and roll in crumbs.
Place chicken in baking dish. bake, uncovered, at 400 degrees for about 40 minutes or until chicken is browned. Serve with Cordon Bleu Sauce.
Chicken Cordon Bleu Sauce
3 tablespoons butter
3 tablespoons flour
1 cup evaporated milk
1 cup hot water
2 chicken bouillion cubes
salt and pepper
Melt butter in saucepan over medium heat. Stir in flour with wire whisk. Gradually pour in milk stirring constantly until smooth. Add bouillion to water and stir until dissolved. Stir into milk mixture and bring to a boil. Add salt and pepper to taste.
