Happy Birthday Beckham!

As usual I am late! I really do have good intensions. I want to take pictures and then blog about how great my day was.......that has yet to happen. Wednesday was Beckhams's FIRST birthday. It is amazing how fast a year goes by! I swear he was just a little guy that laid there and now he is EVERYWHERE. This kid is all boy. He climbs on everything! My favorite thin about Beck is that he is a loverboy. How great is it to have a child that likes to cuddle. I know that the day will come when he does not want to just cuddle with his mom so I am enjoying every second of it!

HAPPY BIRTHDAY BECKHAM!

Beef Satay Fried Rice

I just started selling Pampered Chef because I LOVE it and they have super good recipes!

Give this one a try!

Ingredients:
• 2 tsp (10 mL) vegetable oil, divided
• 1 lb (450 g) boneless beef top sirloin steak, cut 1/2 in. (1 cm) thick
• 2 medium carrots, peeled
• 1 medium red bell pepper
• 4 green onions with tops
• 1/2 tsp (2 mL) Thai red curry paste
• 3 pouches (8.8 oz/250 g each) cooked white rice or 6 cups (1.5 L) cold cooked white rice
• 3/4 cup (175 mL) peanut sauce
• 1/2 cup (125 mL) dry roasted peanuts
• 1 tsp (5 mL) salt
• 1/2 tsp (2 mL) coarsely ground black pepper

Directions:

1. Prepare and cook steak.

Add 1 tsp (5 mL) of the oil to (12-in./30-cm) Skillet; heat over medium-high heat 1-3 minutes or until shimmering. Cut steak crosswise into 1/4-inch-thick (6-mm) strips. Add steak to Skillet, cook and stir 3-4 minutes or until outside surfaces of steak are no longer pink. Remove from Skillet; set aside and keep warm.

2. Prepare vegetables and cook rice and vegetables.

Meanwhile, cut carrots into julienne strips using Julienne Peeler. Thinly slice bell pepper and green onions with Santoku Knife. To same Skillet, add remaining 1 tsp (5 mL) oil and curry paste; cook 1-2 minutes or until fragrant. Separate rice according to package directions. Add rice and vegetables to Skillet; cook and stir 3-4 minutes or until rice is coated with oil and vegetables are tender.

3. Finish and serve.

Add steak, sauce, peanuts, salt and black pepper to Skillet. Cook 1-2 minutes or until heated through, stirring constantly. Yield: 6 servings

Let Someone Pamper You!!

One indulgence most of us enjoy on vacation is being served. Whether it's the fresh towels each day, a cold drink by the pool, or just having the paper delivered with morning coffee, pampering certainly reverses any feelings of being overburdened. So for a quick-lift when you're not on vacation, consider letting someone pamper you!!

  • If your budget allows, get a quick chair massage during your lunch hour.
  • At day's end, ask your significant other to rub your feet
  • If a coworker offers to bring you back a drink or something to eat, gratefully accept.
  • Find a one-time "hire" to wash your car or windows.
  • When a friend offers to treat you to lunch, receive the gift graciously.
  • If your boss says you deserve the afternoon off, take it.
  • If a neighbor offers to mow your lawn when he does his own, take him up on it.

For those of you who are thinking, "Right! Like anyone would offer to wait on me!" I can only say that if you ask for what you want and believe that you will receive it, you usually do.

The other day my sister had a friend that wanted her to go with her to get a pedicure and offered to PAY and she DECLINED!! Sometimes we feel bad about letting others do things for us, but LET THEM and then you too will have the chance to show the favor to someone else! Being a mother is stressful and we ALL need to take a time out once in a while.

Easter Craft!

Here is something fun to do with the Kiddos! I am going to have the kids in nursery make them for the activity....they will LOVE them!

You'll Need:
1. baby food jar - clean and without label
2. glue - Glue dots are great for this craft
3. cotton balls (marshamllows or white jeely beans work for an edible treat)
4. wiggle Eyes
5. pink or white small pom-pom (1/2 inch)
6. pink or white larger pom-pom (1 inch)
7. small piece of white yarn
8. white or pink chenille stem ( pipe cleaner)
9. Acrylic paint - white or pink

Paint the jar lid with acrylic paint and let it dry while you make the rest of the bunny. Fill the baby food jar with cotton balls, marshmallows or other white treat.
To make the whiskers, tie a knot in the center of the yarn. Then unravel the pieces and trim

Glue the whiskers to the front of the jar and then add the smaller pom-pom nose and eyes. Now add the larger pom-pom tail to the back bottom edge of the jar.

Cut the chenille stem in half to make two ears. Loop and twist the ends together and then glue to the back of the lid. Glue dots or a hot glue gun will make this step easier.

Have Fun!
